Creamy Strawberry Mango Smoothie
generously serves 2
1/2 cup orange juice
1 mango - peeled, seeded, and chopped
1 banana - peeled and chopped
1/4 cup full fat Greek yogurt
1 10-ounce bag frozen organic strawberries (or use fresh and add a few ice cubes)

I used green mangos, which worked out perfectly because I was a little skeptical of the sweetness of them. I was expecting more of a tropical burst, but they were much more subtle. Paired with the coconut flakes, they were awesome! The dough is more like cookie dough, but have no worries, baking at 325 guarantees a moist treat.

I experimented with small, golden-skinned champagne mangos for this recipe and they were awesome! Rule of thumb for mangos, always buy more than you think you'll need. I felt like I wasted a lot of "meat". I added diced avocado to make it a little more colorful. This is great alone or as a taco filling or added protein topping.
